Rib cook off at my house today

My son wants to have a rib cook off against his old man today. Grandparents kids and kids friends all are here to get in on the eats.

I’m almost done but the son who’s idea this was isn’t even here yet. He been playing with his darn truck.

One has run one is Korean bbq and another is just bbq

Starting Monday gonna have to eat lean. Animal fats play havoc with my cholesterol when on gear. Not starting gear until July but gonna get diet in order a head of time. Get cholesterol in a real good place before starting.

I’ll be smoking 2 racks of St Louis Spares tomorrow… hot n fast, 275 - 300 for 3 hours. Burgers and Brats tonight

That’s about how I did these. Was a little disappointed they had a ton of fat inbetween the meat layers.
