New smoker from Father’s Day

First run was a success.

Made short ribs and chicken and a rump roast. All turned out fantastic.

Going to be smoking a pork shoulder shortly. On a side note, smoking white meats like chicken and turkey really absorb the smoke. One of my favorites to do with that is to turn it into a low calorie high protein chicken/turkey salad by just adding light Mayo, dill relish, and a little lemon juice. Also it’s great to just go with just various mustards. With smoking you definitely don’t need much seasonings as the smoke does most of the work!
 
I like using chipotle Mayo and red onions in my smoked chicken salad. The chipotle pepper with the smoke is one of the best combos I’ve found. I’m actually up right now(it’s 4am) just got done setting up my July 4th brisket. I’ve got a conventional smoker but I’m using my electric smoker for this one. It’s a 6lb piece of meat and the electric smoker just provides a more even cook over those long smokes. Happy 4th fellas!
